A vertical bun toaster for burgers toasts only the cut side of the bun, so the top stays soft. Most models toast a bun in 9 to 50 seconds and plug into a normal 120V outlet. For a small shop, buy the Antunes VCT-1000 ($2,562) or the Prince Castle 297-T9 ($2,479). Plan $400 to $900 a year for parts that wear out. If your grill only jams on Friday nights, a $190 to $759 plug-in griddle fixes it for less.

How a vertical bun toaster for burgers works

A bun has two halves: the crown is the top half, and the heel is the bottom half. You drop both halves in at the top, with the cut sides facing each other. A moving belt pulls them down past a hot plate in the middle, called the platen.

Only the cut faces touch the platen (Antunes owner's manual). The outside of the crown rides on the belt and never touches the hot plate, so it comes out soft. A thin nonstick cover on the plate, the release sheet, stops the bread sticking. The toasted bun drops out at the bottom.

The belt presses every bun the same way. Crowns come out flat and even, not saggy the way they sometimes do on a flat-top. The Antunes VCT-2000 also warms the top of the crown, with a second heater that doesn't toast it (Antunes spec sheet, 2021). It needs a 208V outlet.

What it frees up on your grill

Vollrath, a US kitchen equipment maker, puts it simply: for every inch of grill a burger takes, its bun takes two more (Vollrath, 2019). A 4-inch patty needs one 4-inch spot, and its two halves need two more. When buns share the flat-top, they fill two-thirds of it.

As a rule of thumb, buns sit on a hot flat-top for about 30 seconds and patties for several minutes. So you won't cook three times as many burgers. What you get back is space in the last minute before plating, when you need it most, and one cook's hands.

Now the money. Take a burger that sells for $12 with $4 of food in it. That leaves $8 to pay for labor, rent and profit. Here is how many extra burgers each fix has to sell to pay for itself, at September 2026 prices:

Say the toaster lets you sell 5 more burgers each lunch, 6 days a week. That's 30 a week, so it pays for itself in about 11 weeks. Its wear parts then cost you 50 to 113 burgers a year.

If no order ever waits for grill space, the toaster won't sell one extra burger. It will only free your cook's hands. Watch the grill for three lunches before you buy.

Which vertical bun toaster to buy

Every model below toasts far more buns than a small shop sells. An Antunes VCT-25 is rated for 1,400 buns an hour, and a Prince Castle 297-T9 for 2,200. So choose on the power outlet, the settings and how the bun comes out, not on speed.

Buy the Antunes VCT-1000 if you use one bun size. It toasts in 10 seconds, runs on a normal outlet, and WebstaurantStore stocks its release sheets and belt parts.

Look at Prince Castle if you use two bun sizes, like a slider and a big brioche. The 297's heel and crown knobs are marked 1 to 5, with half marks between. That's finer than the 6 settings per side on the Antunes VCT-25 and VCT-50.

On a tight budget, the Avantco BT18A still does 450 buns an hour, but you change its sheet every 30 days. Skip the Star SCT4000E at $11,679 (REWonline), because it's built for chains.

Butter the bun before it goes in

These toasters toast dry, and butter is up to you. It goes on the cut side before the bun drops in. There are two ways to do it:

  • Brush or pump a liquid butter alternative, a butter-flavored oil, onto the cut side. Whirl, from Stratas Foods, costs $47.99 for 3 gallons at WebstaurantStore, and the maker says it needs no fridge. Phase, from Ventura Foods, costs $54.95 for 3 gallons at FoodServiceDirect (September 2026).
  • Add a butter wheel, a turning roller that coats the cut face as you slide the bun across it. The Antunes butter wheel kit costs $500.06 at WebstaurantStore.

Keep the liquid in a pan next to the toaster, so the person building burgers butters and drops each bun in one move.

What the upkeep costs

The parts that touch the bread wear out, and you replace them on a schedule. Here are the Antunes parts at WebstaurantStore, September 2026:

That's about $400 to $900 a year, if your toaster takes one sheet and one pair of belt wraps at a time. Check the parts list for your model number. Antunes says to check the chain every 3 to 6 months, take out links when it stretches, and oil the drive chain once a year.

Prince Castle is similar. Its CTS sheets last 4 to 6 weeks. The 297 uses two sheets that you swap daily, and they last 4 to 6 months.

The Antunes manual asks for a clean at the end of every day:

  1. Unplug the toaster and clean it while it's still warm.
  2. Wipe both sides of the release sheet with soapy water, then sanitizer, a liquid that kills germs. Let it dry in the air.
  3. Wipe the belt wraps the same way. Run the toaster for 15 seconds to bring the rest of the wrap round, and wipe that too.
  4. Wash the heat shield, and the butter wheel if you have one.

Skip this for months and burnt crumbs build up on the belt. The Antunes manual names sugar and burnt bits inside the belt wrap as a cause of problems. Brioche and other sweet buns leave more sugar, so never skip the daily wipe with them.

Signs it's going wrong

  • Buns start to stick. That's a dirty or worn release sheet, and anything stuck burns fast. Clean the sheet, and change it if sticking comes back. Avantco says to change the sheet when buns start sticking, even before 30 days.
  • Crowns come out with dark crumbs on them. If you slice buns by hand, crumbs fall into the toaster and stick to the next crowns. Keep a clean, dry pastry brush by the machine and brush the belt every couple of runs, or buy buns sliced at the bakery.
  • The middle of the bun is pale. The gap is too wide for your bun.
  • Crowns come out squashed or torn. The gap is too tight.

Set it up before the first rush

The Antunes VCT-25 and VCT-50 have one knob for the heel and one for the crown. Each goes from 1, a ½ inch gap, to 6, a ⅞ inch gap. The manual's starting point is 2 for the heel and 6 for the crown.

Toast one bun. If the middle is pale, turn that side one number lower. If the crown is squashed, turn it one number higher. Write the numbers that work on a piece of tape on the machine, so every shift uses them.

Antunes toasters need 30 minutes to heat up. Switch yours on first thing when you open.

Put the toaster at the station where burgers are built, not next to the grill. On some models, toasted buns land at the bottom and stay there. Buyers of the Prince Castle CTS-W report that buns stack and get crushed if nobody takes them out. Drop in only as many buns as the tickets on the rail, and take each one out as it lands.

Measure first. The Antunes models are 21¼ inches wide, and the CTS-W is 20¼ inches wide and 7¼ inches deep. The VCT-1000 draws 15 amps, so give it an outlet on a circuit nothing else uses, and ask an electrician before you order. The VCT-2000 needs a 208V outlet, NEMA 6-20, which is not a normal wall outlet.

The cheaper fix: a plug-in griddle

A small countertop griddle at the build station gives the buns their own hot steel. Lay the halves cut side down, and the crowns stay soft the same way. Buttering stays simple too.

  • Avantco EG16N: $189.99, 120V, 15¾ inches wide (WebstaurantStore, September 2026). Its listing shows an ETL electrical safety mark, but no food safety listing.
  • Waring WGR140X: $759.00, 120V, 17 inches wide, with a 14 by 16 inch cooking plate. It's certified by NSF, the best-known food equipment safety tester.

The Waring's plate holds 12 halves of a 4-inch bun, so 6 buns at a time. The catch is that someone still puts each bun down and picks it up after about 30 seconds. You've moved the job off the grill, not removed it.

Pick the griddle if the grill jams on one or two rushes a week, and the toaster if it jams every lunch. Buy the Waring over the Avantco, unless your health inspector says the Avantco is fine.

US rules that apply (2026)

Health code

The FDA published the 2026 Food Code on September 17, 2026. Your state adopts it on its own schedule, and your city or county health department checks it. Section 4-205.10 covers equipment certification. A machine certified for food safety by a body the American National Standards Institute (ANSI) approves counts as meeting the Food Code's equipment rules.

NSF is the best-known of these bodies, and NSF/ANSI 4 is its standard for commercial cooking equipment. A UL or ETL mark on its own is often only about electrical safety. Look for a food safety listing on the spec sheet, and ask your inspector about any machine without one before you pay. Rules differ by state and city, so check with your health department.

Tax

Section 179 of the tax code lets you take the full price of a toaster or griddle off your taxable income. You do it in the year you start using it. The IRS limit for 2026 is $2,560,000 (Revenue Procedure 2025-32). Ask your accountant how it fits your year.

Do this week

  1. For three lunches, count how many burger tickets wait for grill space, and for how long.
  2. Measure the counter at your build station. A vertical toaster needs about 21 inches of width.
  3. Check the outlet there: 120V on its own circuit for the VCT-1000 or a Prince Castle, 208V for the VCT-2000.
  4. Measure your bun's width and height, and send them to the dealer with the model you want. The CTS-W takes buns up to 5½ inches wide.
  5. If you buy, order a spare pack of release sheets and belt wraps with the toaster.
