How to deal with a toxic restaurant employee
When one cook slams equipment and ignores the nightly cleaning checklist, they create a hostile work environment for everyone else. If you have talked to them twice about their attitude, the time for training is over. They know how to hide their bad behavior when you are in the kitchen.

Document everything they do
Write down every time they break a rule. You need a paper trail to show a pattern of bad behavior.
